Ingredients

  • 2-1/2 pound beef cubes
  • 1 teaspoon kosher salt
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 2 small onions, diced
  • 1 cup red wine
  • 3 carrots, peeled and cut into 1 inch pieces
  • 1-1/2 pound small gold potatoes, quartereed
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • pinch pepper

How To Make amazing slow cooker beef stew

  • Step 1
    Preheat the slow cooker. Set a 4 to 6 quart slow cooker to low to start cooking up.
  • Step 2
    Season and flour the beef cubes. Place in a large bowl and season with salt. Sprinkle with flour and toss to combine.
  • Step 3
    Brown the beef in 1 tbsp of oil in large skillet over medium high heat. Add half of the beef and sear until browned on a few sides, 2 to 3 minutes per side. Transfer the browned beef to the slow cooker and repeat with the remaining oil and beef.
  • Step 4
    Saute the onions and add to the skillet, 4 to 5 minutes untill softened. Deglaze the onion pan with the red wine. Pour the red wine mixture over the beef. Add the carrots over the beef, followed by the potatoes.
  • Step 5
    Whisk the beef broth and the tomato paste in a small bowl. Pour over the potatoes. Cover and cook on low setting about 8 hours.
