Ingredients
- 2-1/2 pound beef cubes
- 1 teaspoon kosher salt
- 2 tablespoons flour
- 2 tablespoons olive oil
- 2 small onions, diced
- 1 cup red wine
- 3 carrots, peeled and cut into 1 inch pieces
- 1-1/2 pound small gold potatoes, quartereed
- 2 cups beef broth
- 2 tablespoons tomato paste
- pinch pepper

Step 1Preheat the slow cooker. Set a 4 to 6 quart slow cooker to low to start cooking up.

Step 2Season and flour the beef cubes. Place in a large bowl and season with salt. Sprinkle with flour and toss to combine.

Step 3Brown the beef in 1 tbsp of oil in large skillet over medium high heat. Add half of the beef and sear until browned on a few sides, 2 to 3 minutes per side. Transfer the browned beef to the slow cooker and repeat with the remaining oil and beef.

Step 4Saute the onions and add to the skillet, 4 to 5 minutes untill softened. Deglaze the onion pan with the red wine. Pour the red wine mixture over the beef. Add the carrots over the beef, followed by the potatoes.

Step 5Whisk the beef broth and the tomato paste in a small bowl. Pour over the potatoes. Cover and cook on low setting about 8 hours.
