african beef and rice

Some years ago, my husband and I spent a lot of time in Kenya. I had a very dear friend in Nairobi who made this dish, which I have made regularly for 25+ years. It is easy and very scrumptious! My family loves this dish.

Ingredients

  • 1 pound round steak, cubed
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 1 - bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes, to taste
  • 1 can 16 oz. kidney beans, drained
  • 1 cup raw white rice
  • 2 medium green peppers, chopped
  • 1 medium onion, chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon curry powder
  • 1/4 teaspoon black pepper

How To Make african beef and rice

  • Step 1
    Preheat oven to 350º.
  • Step 2
    Brown the beef in oil in skillet; add water, bay leaf, 1 tsp. salt and red pepper flakes. Cover and simmer for 45 minutes.
  • Step 3
    Drain beef reserving the broth. Add enough water to make two cups of liquid; adding the cooked beef and remaining ingredients. Pour into a 2 quart casserole dish; cover and bake for 50 minutes.
  • Step 4
    Stir to mix before serving.
