Some years ago, my husband and I spent a lot of time in Kenya. I had a very dear friend in Nairobi who made this dish, which I have made regularly for 25+ years. It is easy and very scrumptious! My family loves this dish.

round steak, cubed
2 Tbsp
vegetable oil
1 c
bay leaf
1 tsp
1/4 tsp
red pepper flakes, to taste
1 can(s)
16 oz. kidney beans, drained
1 c
raw white rice
2 medium
green peppers, chopped
1 medium
onion, chopped
1 1/2 tsp
1 tsp
curry powder
1/4 tsp
black pepper

How to Make African Beef and Rice


  • 1Preheat oven to 350ยบ.
  • 2Brown the beef in oil in skillet; add water, bay leaf, 1 tsp. salt and red pepper flakes. Cover and simmer for 45 minutes.
  • 3Drain beef reserving the broth. Add enough water to make two cups of liquid; adding the cooked beef and remaining ingredients. Pour into a 2 quart casserole dish; cover and bake for 50 minutes.
  • 4Stir to mix before serving.
