Some years ago, my husband and I spent a lot of time in Kenya. I had a very dear friend in Nairobi who made this dish, which I have made regularly for 25+ years. It is easy and very scrumptious! My family loves this dish.

Ingredients

  • 1 lb
    round steak, cubed
  • 2 Tbsp
    vegetable oil
  • 1 c
    water
  • 1
    bay leaf
  • 1 tsp
    salt
  • 1/4 tsp
    red pepper flakes, to taste
  • 1 can(s)
    16 oz. kidney beans, drained
  • 1 c
    raw white rice
  • 2 medium
    green peppers, chopped
  • 1 medium
    onion, chopped
  • 1 1/2 tsp
    salt
  • 1 tsp
    curry powder
  • 1/4 tsp
    black pepper

How to Make African Beef and Rice

Step-by-Step

  1. Preheat oven to 350º.
  2. Brown the beef in oil in skillet; add water, bay leaf, 1 tsp. salt and red pepper flakes. Cover and simmer for 45 minutes.
  3. Drain beef reserving the broth. Add enough water to make two cups of liquid; adding the cooked beef and remaining ingredients. Pour into a 2 quart casserole dish; cover and bake for 50 minutes.
  4. Stir to mix before serving.
