This is one of the easiest things to make. It is great for large crowds because it can be served several ways or can be multiplied easily. We eat this over white rice, fritos, with cornbread or just by itself. I like to double or triple the recipe and put some in the freezer. If I need food to take to someone I just grab it from the freezer. Like most stews and soups its even better the next day.

Ingredients

  • 2 pounds hamburger meat
  • 2 cans black beans (15 oz)
  • 2 cans rotel
  • 2 cans ranch style beans (15 oz)
  • 2 cans corn (15 oz)
  • 2 packages taco seasoning
  • - onion flakes as desired
  • - salt and pepper
  • - cheddar cheese, shredded
  • - sour cream

How To Make 2 stew

  • Step 1
    Season meat with salt, pepper and onion flakes. Brown and drain.
  • Step 2
    Sprinkle taco seasoning over meat and stir.
  • Step 3
    Open all cans of Rotel, beans and corn and pour into the pot. Do not drain any of these.
  • Step 4
    Add small amounts of water if needed. Let simmer until the flavors mix well together.
  • Step 5
    Serve over white rice, fritos, with cornbread or just by itself. Top with cheese and sour cream.
