spinach & chickpea coconut curry

Another one of my go to recipes that we just love...easy and delicious!!!

yield 6-8

Ingredients

  • 2 cups canned chickpeas, rinsed well and drained
  • 1 can 28 oz diced tomatoes
  • 2 medium potatoes, peeled , diced and parboiled
  • 3 cups baby spinach
  • 5 - whole cloves....was out so used a pinch of ground cloves
  • 1 1/2 teaspoons turmeric, ground
  • 1 1/2 teaspoons curry powder
  • 5 cloves garlic, minced
  • 1 can 15 oz coconut milk.

How To Make spinach & chickpea coconut curry

  • Stirring in the fresh spinach
    Step 1
    Mix together all of the above ingredients, bring to boil, reduce heat and simmer 30 mins. Serve over steamed jasmine rice. So yummy!!
