From old cookbook found at garage sale titled, of all things, Chinese Cooking. (LOL)I have not used this recipe, but that is going to change. It reads quick, simple and delicious. I am going to try. How about you.

Ingredients
- one - 5 oz pkg fine egg noodles
- 2 tbs - safflower oil, or your choice
- 1 cup - bamboo shoots
- 1 cup - fresh mushrooms,sliced
- 1 cup - almonds,sliced
- 1/2 cup - chicken broth
- 3 tbs - soy sauce & salt to taste
How To Make soft fried noodles with mushrooms

Step 1Cook noodles in large pot in boiling, lightly salted water 8 minutes, drain well.

Step 2Heat oil in wok or skillet over low heat. Add noodles, stir-fry 4 minutes. Stir in bamboo shoots, mushrooms, and almonds, mix thoroughly.

Step 3Stir in broth, soy sauce, and salt. Reduce heat to low, simmer, covered, 20 minutes or until liquid is almost absorbed.
