Peanut Broccoli Salad

This is a quick and tasty salad that can be made with cooked shrimp or chicken or pork added if desired.
We like either way. Makes a nice dish for a summer BBQ side too.

12 oz
pkg. broccoli slaw, chopped to bite size pieces
1 bunch
green onions, cleaned and sliced some tops too
1/3 c
canola oil
1 tsp
sesame seeds
3 oz
pkg. ramen noodles, crushed,( save seasoning pkg. for another time)
1/4 c
granulated sugar
1/4 c
seasoned rice vinegar or white vinegar
1 Tbsp
lite soy sauce
1 tsp
dark sesame oil
1/2 c
honey roasted peanuts
1/2 c
honey roasted cashews, chopped slightly
1/2 tsp
crushed red pepper flakes, optional

How to Make Peanut Broccoli Salad


  • 1Combine onions and chopped broccoli slaw in a large bowl.
    Heat 2 Tablespoons of the oil in a medium skillet over medium-low heat. Add sesame seeds and crushed noodles. Cook and stir until noodles begin to turn golden brown. Add to broccoli mixture.
  • 2Whisk together sugar, vinegar, soy sauce,sesame oil and remaining canola oil in a small bowl. Pour dressing over broccoli mixture. Add all the nuts and red pepper,if desired. Toss until coated evenly.
