peanut broccoli salad
This is a quick and tasty salad that can be made with cooked shrimp or chicken or pork added if desired. We like either way. Makes a nice dish for a summer BBQ side too.

Ingredients
- 12 ounces pkg. broccoli slaw, chopped to bite size pieces
- 1 bunch green onions, cleaned and sliced some tops too
- 1/3 cup canola oil
- 1 teaspoon sesame seeds
- 3 ounces pkg. ramen noodles, crushed,( save seasoning pkg. for another time)
- 1/4 cup granulated sugar
- 1/4 cup seasoned rice vinegar or white vinegar
- 1 tablespoon lite soy sauce
- 1 teaspoon dark sesame oil
- 1/2 cup honey roasted peanuts
- 1/2 cup honey roasted cashews, chopped slightly
- 1/2 teaspoon crushed red pepper flakes, optional
How To Make peanut broccoli salad

Step 1Combine onions and chopped broccoli slaw in a large bowl. Heat 2 Tablespoons of the oil in a medium skillet over medium-low heat. Add sesame seeds and crushed noodles. Cook and stir until noodles begin to turn golden brown. Add to broccoli mixture.

Step 2Whisk together sugar, vinegar, soy sauce,sesame oil and remaining canola oil in a small bowl. Pour dressing over broccoli mixture. Add all the nuts and red pepper,if desired. Toss until coated evenly.
