peanut broccoli salad

This is a quick and tasty salad that can be made with cooked shrimp or chicken or pork added if desired. We like either way. Makes a nice dish for a summer BBQ side too.

Ingredients

  • 12 ounces pkg. broccoli slaw, chopped to bite size pieces
  • 1 bunch green onions, cleaned and sliced some tops too
  • 1/3 cup canola oil
  • 1 teaspoon sesame seeds
  • 3 ounces pkg. ramen noodles, crushed,( save seasoning pkg. for another time)
  • 1/4 cup granulated sugar
  • 1/4 cup seasoned rice vinegar or white vinegar
  • 1 tablespoon lite soy sauce
  • 1 teaspoon dark sesame oil
  • 1/2 cup honey roasted peanuts
  • 1/2 cup honey roasted cashews, chopped slightly
  • 1/2 teaspoon crushed red pepper flakes, optional

How To Make peanut broccoli salad

  • Step 1
    Combine onions and chopped broccoli slaw in a large bowl. Heat 2 Tablespoons of the oil in a medium skillet over medium-low heat. Add sesame seeds and crushed noodles. Cook and stir until noodles begin to turn golden brown. Add to broccoli mixture.
  • Step 2
    Whisk together sugar, vinegar, soy sauce,sesame oil and remaining canola oil in a small bowl. Pour dressing over broccoli mixture. Add all the nuts and red pepper,if desired. Toss until coated evenly.
