As a main dish, this is always a hit. You can add whatever vegetables and as many as you like.

Ingredients

  • 1/2 cup carrots, thin sliced
  • 1/2 cup sugar snaps, sliced into bite sized pieces
  • 5 - green onions, sliced
  • 8 ounces mushrooms, quartered
  • 8 ounces mung beans sprouts
  • - vegetable oil
  • - you can add other veggies: bite sized pieces of bell pepper, zucchini, bamboo shoots, water chestnuts
  • 2 packages lo mein noodles or 1 box (16 oz) spaghetti, cooked according to package directions, drained and rinsed in cold water. set aside
  • SAUCE
  • 3 - 4 tablespoons sugar
  • 4 tablespoons tamari
  • 1/2 teaspoon grated fresh ginger, optional

How To Make lo mein

  • Step 1
    Combine tamari, sugar and ginger and set aside.
  • Step 2
    Cook noodles according to package directions. Drain and rinse and set aside until veggies are done.
  • Step 3
    Stir fry vegetables in oil until tender crisp. Add half of the sauce, mixing well. Remove from wok to a large bowl and set aside.
  • Step 4
    Add a little more oil to the wok. Add drained noodles; mix to coat with oil and separate. Heat through, then add rest of sauce. Mix well.
  • Step 5
    Add veggies. Toss to mix. Serve.
