This is definitely an occasional treat, as duck is very rich in fats and texture. This is a variation of a recipe given me by a Laotian friend. She grows her own herbs and spices but I have just chosen to use five spice powder, standard hoisin and soy sauce. Feel free to experiment with the spices.

Ingredients

  • 1 - whole duck
  • 1 tablespoon ground ginger
  • 3-5 - scallions, cut into 1" lengths
  • 6 cloves garlic peeled and smashed
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • - salt & pepper to taste
  • 1 teaspoon five spice powder

How To Make if it walks like a duck....sallye

  • Step 1
    Remove duck from fridge about 30 minutes before ready to cook Wash duck inside and out and pat dry with paper towels Preheat oven to 350º
  • Step 2
    Combine all other ingredients in sauce pan and heat on medium heat, boiling for about 5 minutes until mixture begins to thicken Remove from heat and allow to cool to lukewarm
  • Step 3
    Place duck in heavy roasting pan breast side up Brush duck heavily with sauce inside and out Place in 350º oven and cook for 2 hours or until meat thermometer reaches 160º in thickest part of duck Baste at least twice during cooking time with sauce. If meat begins to overbrown, "tent" with aluminum foil
