IF IT WALKS LIKE A DUCK....SALLYE
This is a variation of a recipe given me by a Laotian friend. She grows her own herbs and spices but I have just chosen to use five spice powder, standard hoisin and soy sauce.
Feel free to experiment with the spices.
1 Tbspground ginger
3-5scallions, cut into 1" lengths
6 clovegarlic peeled and smashed
2 Tbsphoisin sauce
2 Tbspsoy sauce
1 Tbspsesame oil
·salt & pepper to taste
1 tspfive spice powder
How to Make IF IT WALKS LIKE A DUCK....SALLYE
- Remove duck from fridge about 30 minutes before ready to cook
Wash duck inside and out and pat dry with paper towels
Preheat oven to 350º
- Combine all other ingredients in sauce pan and heat on medium heat, boiling for about 5 minutes until mixture begins to thicken
Remove from heat and allow to cool to lukewarm
- Place duck in heavy roasting pan breast side up
Brush duck heavily with sauce inside and out
Place in 350º oven and cook for 2 hours or until meat thermometer reaches 160º in thickest part of duck
Baste at least twice during cooking time with sauce.
If meat begins to overbrown, "tent" with aluminum foil
