This is definitely an occasional treat, as duck is very rich in fats and texture.

This is a variation of a recipe given me by a Laotian friend. She grows her own herbs and spices but I have just chosen to use five spice powder, standard hoisin and soy sauce.

Feel free to experiment with the spices.

Ingredients

  • 1
    whole duck
  • 1 Tbsp
    ground ginger
  • 3-5
    scallions, cut into 1" lengths
  • 6 clove
    garlic peeled and smashed
  • 2 Tbsp
    hoisin sauce
  • 2 Tbsp
    soy sauce
  • 1 Tbsp
    honey
  • 1 Tbsp
    sesame oil
  • ·
    salt & pepper to taste
  • 1 tsp
    five spice powder

How to Make IF IT WALKS LIKE A DUCK....SALLYE

Step-by-Step

  1. Remove duck from fridge about 30 minutes before ready to cook

    Wash duck inside and out and pat dry with paper towels

    Preheat oven to 350º
  2. Combine all other ingredients in sauce pan and heat on medium heat, boiling for about 5 minutes until mixture begins to thicken

    Remove from heat and allow to cool to lukewarm
  3. Place duck in heavy roasting pan breast side up

    Brush duck heavily with sauce inside and out

    Place in 350º oven and cook for 2 hours or until meat thermometer reaches 160º in thickest part of duck

    Baste at least twice during cooking time with sauce.

    If meat begins to overbrown, "tent" with aluminum foil
