This is definitely an occasional treat, as duck is very rich in fats and texture. This is a variation of a recipe given me by a Laotian friend. She grows her own herbs and spices but I have just chosen to use five spice powder, standard hoisin and soy sauce. Feel free to experiment with the spices.

Ingredients
- 1 - whole duck
- 1 tablespoon ground ginger
- 3-5 - scallions, cut into 1" lengths
- 6 cloves garlic peeled and smashed
- 2 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sesame oil
- - salt & pepper to taste
- 1 teaspoon five spice powder

Step 1Remove duck from fridge about 30 minutes before ready to cook Wash duck inside and out and pat dry with paper towels Preheat oven to 350º

Step 2Combine all other ingredients in sauce pan and heat on medium heat, boiling for about 5 minutes until mixture begins to thicken Remove from heat and allow to cool to lukewarm

Step 3Place duck in heavy roasting pan breast side up Brush duck heavily with sauce inside and out Place in 350º oven and cook for 2 hours or until meat thermometer reaches 160º in thickest part of duck Baste at least twice during cooking time with sauce. If meat begins to overbrown, "tent" with aluminum foil
