Ingredients

  • 3 tablespoons canola oil
  • 1 1/2 cups onion thinly sliced
  • 4 - celery stalks, sliced
  • 2 - minced garlic cloves
  • 1 tablespoon ginger root, minced
  • 1 small red bell pepper, diced
  • 4 cups long grain rice, cooked
  • 1/4 cup beef broth, reduced sodium
  • 5/8 pound cured ham, shredded
  • 1 pound shrimp, cooked and sliced crosswise
  • 1/4 pound snow peas, lightly blanched and thin strips
  • 2 - eggs
  • 2 tablespoons soy sauce
  • 1/2 cup scallion, chopped

How To Make down-home fried rice

  • Step 1
    In large, heavy casserole over medium-low heat, heat canola oil.
  • Step 2
    Add onions, celery, garlic and ginger.
  • Step 3
    Cook, stirring, for 5 minutes.
  • Step 4
    Add diced red pepper; cook 3 minutes.
  • Step 5
    Add rice, broth and ham; cook 2 minutes, stirring ingredients to mix.
  • Step 6
    Add shrimp and snow peas.
  • Step 7
    Cook 1 minute longer and remove from heat.
  • Step 8
    In bowl, beat eggs and soy sauce together.
  • Step 9
    Push rice to sides of casserole, making well in center.
  • Step 10
    Return casserole to medium-low heat; pour egg mixture into well.
  • Step 11
    Stir with fork for about 1 minute, until eggs are just set.
  • Step 12
    Gently fold into rice.
  • Step 13
    Heat through and stir in scallions. (Serve immediately)
