My mother gave me this recipe one night when I was craving Chinese food and I've loved it ever since...even my husband (who doesn't care for Chinese) liked it!!

Ingredients

  • 4 - boneless skinless chicken thighs (breast can be used as well)
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/2 cup water
  • 1 clove garlic
  • 1 tablespoon ketchup
  • 1 tablespoon onion powder
  • 1/4 cup apple juice
  • 1 teaspoon red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • - brown or white rice

How To Make chinese chicken

  • Step 1
    Preheat oven to 350. Brown chicken in a medium skillet (I use cast iron) until cooked through but don't over cook. Remove from heat. Mix the remaining ingredients in a bowl and pour over the chicken.
  • Step 2
    Place the skillet in the oven and bake for 30 minutes, stirring the sauce every 10 minutes. In the mean time, whisk together the cornstarch and water.
  • Step 3
    Remove from oven, take the chicken out and set aside, bring the sauce up to a simmer and whisk in the cornstarch mixture until thick. Place the chicken back in the skillet until warm, slice and serve over rice.
  • Step 4
    NOTE: You can also use bone in chicken (thighs, legs and breasts are excellent).
