My mother gave me this recipe one night when I was craving Chinese food and I've loved it ever since...even my husband (who doesn't care for Chinese) liked it!!

Ingredients
- 4 - boneless skinless chicken thighs (breast can be used as well)
- 1/3 cup soy sauce
- 1/3 cup brown sugar
- 1/2 cup water
- 1 clove garlic
- 1 tablespoon ketchup
- 1 tablespoon onion powder
- 1/4 cup apple juice
- 1 teaspoon red pepper flakes
- 2 tablespoons cornstarch
- 2 tablespoons water
- - brown or white rice
How To Make chinese chicken

Step 1Preheat oven to 350. Brown chicken in a medium skillet (I use cast iron) until cooked through but don't over cook. Remove from heat. Mix the remaining ingredients in a bowl and pour over the chicken.

Step 2Place the skillet in the oven and bake for 30 minutes, stirring the sauce every 10 minutes. In the mean time, whisk together the cornstarch and water.

Step 3Remove from oven, take the chicken out and set aside, bring the sauce up to a simmer and whisk in the cornstarch mixture until thick. Place the chicken back in the skillet until warm, slice and serve over rice.

Step 4NOTE: You can also use bone in chicken (thighs, legs and breasts are excellent).
