Ingredients

coriander seed - toasted and grind
1 tsp
cumin seed - toasted and grind
1/2
large yellow onion
6 clove
garlic
1
inch fresh ginger
1/4
inch fresh galangal
2 stalk(s)
lemon grass
1 Tbsp
turmeric, ground
4 Tbsp
brown sugar
1 c
sweet soya sauce
4 Tbsp
cooking oil
4
fresh tomatoes
6 lb
chicken breast cut into 1-inch cubes
1 tsp
salt
bamboo skewer soaked overnight

How to Make Chicken Satay

Step-by-Step

  • 1Finely blend all the above ingredients (except the chicken!). Reserve 4 tablespoons of the blended spice to brush over the satay during grilling.
  • 2Marinate all the chicken with the blended spices overnight in the refrigerator for best flavor. Minimum time for marinating the meat is 2 hrs.
  • 3Soak the bamboo skewers in water overnight prior to skewing the chicken to prevent from burning on the grill.
  • 4Grill the chicken skewers on a hot grill for 3 minutes on each side, brush with the reserved blended spice.
  • 5Serve with peanut sauce.
  • 6How to toast and grind spices
    •Soak the two seeds in cold water for 1 minute then drain.
    •Toast in a wok on the stovetop until the seeds are golden brown and aromatic
    •Grind in a spice-grinder.
