Ingredients

  • 1 Tbsp
    coriander seed - toasted and grind
  • 1 tsp
    cumin seed - toasted and grind
  • 1/2
    large yellow onion
  • 6 clove
    garlic
  • 1
    inch fresh ginger
  • 1/4
    inch fresh galangal
  • 2 stalk(s)
    lemon grass
  • 1 Tbsp
    turmeric, ground
  • 4 Tbsp
    brown sugar
  • 1 c
    sweet soya sauce
  • 4 Tbsp
    cooking oil
  • 4
    fresh tomatoes
  • 6 lb
    chicken breast cut into 1-inch cubes
  • 1 tsp
    salt
  • ·
    bamboo skewer soaked overnight

How to Make Chicken Satay

Step-by-Step

  1. Finely blend all the above ingredients (except the chicken!). Reserve 4 tablespoons of the blended spice to brush over the satay during grilling.
  2. Marinate all the chicken with the blended spices overnight in the refrigerator for best flavor. Minimum time for marinating the meat is 2 hrs.
  3. Soak the bamboo skewers in water overnight prior to skewing the chicken to prevent from burning on the grill.
  4. Grill the chicken skewers on a hot grill for 3 minutes on each side, brush with the reserved blended spice.
  5. Serve with peanut sauce.
  6. How to toast and grind spices
    •Soak the two seeds in cold water for 1 minute then drain.
    •Toast in a wok on the stovetop until the seeds are golden brown and aromatic
    •Grind in a spice-grinder.
