Ingredients

  • 1 tablespoon coriander seed - toasted and grind
  • 1 teaspoon cumin seed - toasted and grind
  • 1/2 - large yellow onion
  • 6 cloves garlic
  • 1 - inch fresh ginger
  • 1/4 - inch fresh galangal
  • 2 stalks lemon grass
  • 1 tablespoon turmeric, ground
  • 4 tablespoons brown sugar
  • 1 cup sweet soya sauce
  • 4 tablespoons cooking oil
  • 4 - fresh tomatoes
  • 6 pounds chicken breast cut into 1-inch cubes
  • 1 teaspoon salt
  • - bamboo skewer soaked overnight

How To Make chicken satay

  • Step 1
    Finely blend all the above ingredients (except the chicken!). Reserve 4 tablespoons of the blended spice to brush over the satay during grilling.
  • Step 2
    Marinate all the chicken with the blended spices overnight in the refrigerator for best flavor. Minimum time for marinating the meat is 2 hrs.
  • Step 3
    Soak the bamboo skewers in water overnight prior to skewing the chicken to prevent from burning on the grill.
  • Step 4
    Grill the chicken skewers on a hot grill for 3 minutes on each side, brush with the reserved blended spice.
  • Step 5
    Serve with peanut sauce.

    How to toast and grind spices •Soak the two seeds in cold water for 1 minute then drain. •Toast in a wok on the stovetop until the seeds are golden brown and aromatic •Grind in a spice-grinder.
