Ingredients
- 1 tablespoon coriander seed - toasted and grind
- 1 teaspoon cumin seed - toasted and grind
- 1/2 - large yellow onion
- 6 cloves garlic
- 1 - inch fresh ginger
- 1/4 - inch fresh galangal
- 2 stalks lemon grass
- 1 tablespoon turmeric, ground
- 4 tablespoons brown sugar
- 1 cup sweet soya sauce
- 4 tablespoons cooking oil
- 4 - fresh tomatoes
- 6 pounds chicken breast cut into 1-inch cubes
- 1 teaspoon salt
- - bamboo skewer soaked overnight
How To Make chicken satay

Step 1Finely blend all the above ingredients (except the chicken!). Reserve 4 tablespoons of the blended spice to brush over the satay during grilling.

Step 2Marinate all the chicken with the blended spices overnight in the refrigerator for best flavor. Minimum time for marinating the meat is 2 hrs.

Step 3Soak the bamboo skewers in water overnight prior to skewing the chicken to prevent from burning on the grill.

Step 4Grill the chicken skewers on a hot grill for 3 minutes on each side, brush with the reserved blended spice.

Step 5Serve with peanut sauce.

Step 6How to toast and grind spices •Soak the two seeds in cold water for 1 minute then drain. •Toast in a wok on the stovetop until the seeds are golden brown and aromatic •Grind in a spice-grinder.
