1.5 cups shredded sharp cheddar cheese

2 large shallots, chopped small
•
4 garlic cloves, chopped
•
3 Tbsp room temp butter
•
2 tbsp flour
•
1 cup chicken broth
•
1 packet chicken bouillan
•
3/4 tsp salt
•
2 cups heavy cream
•
1 cup half & half
•
1/2 tsp black pepper
•
1/4 tsp smokey paprika
•
1/8 tsp chipotle chili powder
•
8 grinds of nutmeg
