Gravy:
7 tablespoons butter
2 cups sliced button mushrooms, or more to taste
1 tablespoon all-purpose flour
1 cup beef broth
1 teaspoon Worcestershire sauce
1/2 cup sour cream
salt and ground black pepper to taste
