3 large egg yolks
1/2 cup almond or cashew milk
1/2 cup xylitol
1/2 tsp mineral salt
1 tsp ground cinnamon
1 tbsp (or 1 envelope) unflavored gelatin
1/4 cup cold water
1 1/2 cups heavy whipping cream
GARNISH:
whipped cream
pecans or walnuts
cinnamon or pumpkin spice
