  • 1 1/2 pounds boneless-skinless chicken breasts (about 3-4 large breast halves)

  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese ((1 oz))
  • 1 cup crushed pork rinds ((1 oz))
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon granulated onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large beaten eggs
  • 2 cups low carb Marinara Sauce ((I use Rao's))
  • 6 ounces fresh mozzarella cheese
  • 1/2 cup grated Parmesan cheese ((1 oz))
