Louisiana Red Beans and Rice

INGREDIENTS
1 pound dried red beans (or kidney beans)
2 tablespoons olive oil (extra virgin)
1 pound spicy smoked pork sausage ( such as andouille, sliced)
1 medium yellow onion (chopped)
1 medium green bell pepper (seeded and chopped)
3 ribs celery (chopped)
4 cloves garlic (minced)
3 tablespoons fresh jalapenos (seeded and chopped)
1 tablespoon smoked paprika (or sweet paprika)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme leaves
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
Salt (to taste)
Cracked black pepper (to taste)
2 cups low sodium chicken stock
4-5 cups water
1 tablespoon Worcestershire sauce
2 teaspoons liquid smoke
3 bay leaves
2 cups cooked white rice (for serving)
Freshly chopped parsley and green onions (for garnish)
