200 ml water
150 grams shortening
230 grams unsalted butter ((1 cup; 2 sticks))
473 ml water ((2 cups))
1/2 tsp salt
240 grams all purpose flour ((2 cups))
8 large eggs
750 ml heavy whipping cream
1 tbsp vanilla
1/2 tsp cream of tarter
420 grams powdered sugar, divided
2 1/4 pounds ricotta cheese (drained if necessary)
