4 frozen lobster tails
2 tablespoons olive oil
1 yellow onion (peeled, roughly chopped)
1 stalk celery (roughly chopped)
8 cups seafood stock
1 bay leaf
3 tablespoons unsalted butter
4 tablespoons olive oil
1 leek (rinsed, white and light green parts only, finely diced)
1 yellow onion (peeled, finely diced)
2 cups Arborio rice
1/2 cup white wine
1/4 cups chives (finely chopped)
1 cup Parmigiano-Reggiano (freshly grated, divided)
Kosher salt and freshly ground black pepper (to taste)
