INGREDIENTS
4 packages (12 ounce) frozen whole kernel corn (thawed)
1 1/2 cups half and half (or light cream)
1 cup chopped yellow onion (1 large)
1/2 cup grated Parmesan cheese (2 oz)
1/4 cup butter (cut in sml pieces)
1 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
6 to 7 ounces sliced bacon (5 thick-sliced slices & may use pancetta)
3/4 cup Monterey Jack cheese, shredded (3 oz)
1/2 cup chopped tomato (1 med-sized tomato)
2 tablespoons fresh parsley (snipped)
1 teaspoon red wine vinegar
1/8 teaspoon granulated sugar
