1 Package whole grain pasta such as linguine or fettuccine
1 lb ground Italian sausage made from heritage pork
10-12 large shiitake mushrooms, sliced
32 oz mushroom broth
1/4 cup extra virgin olive oil
4-5 garlic cloves, sliced
pinch of pepper flakes
1 small leek , sliced including green
1 small fennel bulb,stem and fronds, sliced
2 bunches tuscan kale, ribbed and finely sliced into shreds
1/2 pint grape tomatoes
parmesan or romano ribbons for garnish
