5 pounds meat
Use pork, lamb and/or beef slices that can be rolled with seasonings, sausage links and/or spare ribs.
1/3 cup Italian flat-leaf parsley
4 to 5 cloves garlic, peeled
Salt and pepper to taste
1/4 cup grated Pecorino-Romano cheese
2 28-ounce cans pureed plum tomatoes
4 cups tomato juice
1/2 cup water
1/2 cup dry white wine
Extra-Virgin Olive Oil
