12 limequats, seeded for juice
1 ½ cups natural gingersnap cookies, crushed
1 ½ cups water
1 cup brown sugar (use white if you prefer to keep the custard light in color)
3 tablespoons cornstarch
2 tablespoons whole wheat flower
2 tablespoons coconut oil
½ teaspoon citrus salt (see tips)
Meringue
4 egg whites
3 tablespoons powdered sugar
