1 1/2 cups jasmine rice
1/2 cinnamon stick
1 pound large peeled and deveined shrimp, halved lengthwise
One 1 1/2-inch piece fresh ginger, peeled and thinly sliced into matchstick pieces (about 1/4 cup)
2 tablespoons dry sake
1 tablespoon rice wine vinegar
1/4 teaspoon red pepper flakes
Cooking spray
2 large eggs
2 large egg whites
1 cup snow peas, halved
2 carrots, thinly sliced on an angle
2 cloves garlic, thinly sliced
1 small red onion, halved and sliced root to stem
1 tablespoon vegetable oil
2 tablespoons low-sodium soy sauce
2 scallions, white and green parts, thinly sliced
