INGREDIENTS
1 tbsp extra virgin olive oil
1 medium onion ((finely chopped))
2 stalks celery ((finely chopped))
1 medium carrot ((finely chopped))
4 cloves garlic ((minced or crushed))
1 heaping tbsp tomato paste
8 oz cremini mushrooms ((or button mushrooms))
1 tbsp apple cider vinegar
1 tsp paprika
1 tsp ground cumin
1 cup brown lentils ((or green lentils. Dried, not cooked))
4 cups vegetable stock ((or water))
1 tsp dry mint
2 heaping tsp curry powder
½ cup coconut milk
Salt and ground black pepper to taste
2 tbsp cilantro ((or fresh parsley, chopped))
