Lemon Velvet Cake - with Lemon Cream Cheese Frosting - Incredibly Moist!

INGREDIENTS
3 cups cake flour
1 ½ teaspoons baking powder
1 teaspoon salt
½ teaspoon baking soda
1 ½ cups sugar
⅔ cup vegetable oil
⅓ cup shortening ((or softened butter))
1 Tablespoon lemon zest
2 teaspoons lemon extract
1 teaspoon vanilla
3 large eggs
1 ½ cups buttermilk
8 ounces cream cheese ( room temperature)
4 ounces unsalted butter ( room temperature (one stick))
2 ¾ cups powdered sugar
2 Tablespoons lemon juice
Zest from one lemon (about 1 Tablespoon)
1 teaspoon clear vanilla
