2 1/2 c flour, plus more for rolling

1/4 c sugar, plus 1/2 c for coating

Pinch of salt

2 eggs, separated

1 tsp vanilla
•
1 Tbsp lemon zest
•
2 Tbsp unsalted butter at room temperature, cut into pieces
