INGREDIENTS
makes about 18 doughnuts
3/4 c warm milk, heated to about 110 degrees
1 envelope active dry yeast, about 1 scant Tbsp
2 1/2 c flour, plus more for rolling
1/4 c sugar, plus 1/2 c for coating
Pinch of salt
2 eggs, separated
1 tsp vanilla
1 Tbsp lemon zest
2 Tbsp unsalted butter at room temperature, cut into pieces
Vegetable oil for frying and for greasing a bowl
1/4 cup raspberry jam
