For Lemon Curd:

2 eggs plus 4 egg yolks
•
1 cup sugar
•
2/3 cup freshly squeezed lemon juice, strained
•
1 tsp vanilla
•
1/2 cup unsalted butter
•
For Meringue:
•
6 large egg whites
•
2 cups sugar
•
2/3 cup water
•
1 tbsp lemon juice
•
1 tsp vanilla extract
