INGREDIENTS
1 pound medium shrimp (peeled deveined)
3 tablespoons unsalted butter
1 tablespoon olive oil
1/2 tsp EACH paprika, chili powder, salt, pepper
1 tablespoon lemon juice ( plus more to taste)
4-6 garlic cloves (minced)
2 tablespoon olive oil
1 tablespoon butter
1 1/2 cups uncooked orzo pasta
1/2 red onion (chopped)
3 1/2 cups low sodium chicken broth
1/4 cup lemon juice
1/4 tsp EACH salt, pepper
1 TBS EACH fresh dill parsley, oregano (OR 1 teaspoon EACH dried)
2 zucchini halved lengthwise (and sliced 1/4-inch thick)
1 pint cherry tomatoes (halved)
1/2 cup kalamata olives (pitted and halved)
2 tablespoons capers ( optional)
1/4 cup feta
1/4 cup sliced almonds
1/4 cup chopped fresh mint (may sub basil)
