Lemon Cupcakes

INGREDIENTS
1 1/4 cups cake flour
3/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup sugar
1 1/2 teaspoons pure vanilla extract (use half vanilla and half lemon extract for a light lemon flavor)
1/2 cup oil (vegetable, canola or extra light olive oil)
1/3 cup milk (whole or low fat, but avoid fat free)
1/3 cup sour cream (full fat or light, but avoid fat free)
1 to 2 teaspoons fresh lemon zest (optional)
1/2 cup butter
8 ounces cream cheese
4 cups powdered sugar
1 teaspoon fresh lemon zest
1/2 teaspoon vanilla extract
2 to 3 teaspoons fresh lemon juice
