1 tablespoon (9g) buttermilk powder optional for tenderness and flavor
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 cup (43g) vegetable shortening
4 tablespoons (57g) butter cold
3 to 5 tablespoons (43g to 71g) ice water
1 tablespoon cornmeal
1 1/2 tablespoons cornstarch
1 2/3 cups (330g) sugar
1/2 teaspoon salt
6 tablespoons (85g) butter melted
3/4 cup (170g) fresh lemon juice the juice from about 3 lemons
5 large eggs whisked briefly to combine
