1 tablespoon golden raisins, roughly chopped
4-1/2 ounces beef or lamb, preferably finely ground
Sea salt and freshly ground black pepper, to taste
1 heaping tablespoon chopped cilantro leaves
4 heaping teaspoons tahini paste
4 heaping tablespoons Greek yogurt
Juice of 1 small lemon
4 tablespoons olive oil
3 tablespoons water
1 fat garlic clove, crushed
