1/4 cup bacon jam (recipe below)
Kosher salt and freshly ground black pepper, to taste
Optional garnishes: hot pepper vinegar, red onion, sliced boiled egg

1/3 cup bourbon
1 cup apple cider vinegar
1 cup brown sugar
1/4 cup whole-grain mustard
