2 tablespoons ghee or a mixture of butter and oil
3 black cardamom pods
1 6-inch cinnamon stick, broken in half
3 bay leaves
1 small onion, chopped
2-inch piece fresh ginger, minced or grated
2 large cloves garlic, minced
3 fresh green chilies, seeded and minced
5 1/2 oz(160 ml) can tomato paste
1 tablespoon paprika
2 teaspoons sea salt
2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne
1/2 teaspoon turmeric
1/2 cup heavy cream
1/2 teaspoon garam masala
1/2 to 2/3 cup paneer cheese, shredded
2 tablespoons fresh cilantro, chopped
small handful dried curry leaves
