INGREDIENTS

2 1/2 cups flour
•
2 cups sugar
•
1tsp baking powder
•
1/2 tsp baking soda
•
1 1/3 cups buttermilk
•
1/2 cup butter room temperature
•
1 tsp vanilla extract
•
The zest of 2 limes
•
4 egg whites
•
Add all dry ingredients lime zest, extract, and butter into the bowl of your electric mixer. Mix for 30 seconds on low.

Add in buttermilk, beat on high for 2 minutes.
•
Add in egg whites beat for additional 2 minutes.
•
Divide cake batter into 2 greased/floured 8 inch round cake pans. Bake on 350 for 30-40 minutes. Or until a tooth pick is inserted and comes out clean.

For the Key Lime Curd:

1 cup sugar

1/4cup butter
•
3/4 cup fresh lime juice
•
1 tablespoon lime zest
•
2 eggs, beaten

Let the curd cool to room temperature.

White Chocolate Buttercream Frosting
•
Makes about 2 ½ cups
•
1 C. unsalted butter, softened
•
2 ½ C. powdered sugar (or more, depending on desired consistency)
•
Pinch of salt
•
6 oz. good quality white chocolate, chopped (NOT white chocolate chips or candy melts!)

¼ C. heavy whipping cream
•
¼ tsp. vanilla extract
