Keto Taco Stuffed Pepper Casserole-Quick, Easy, a Family Favorite!

"This taco stuffed pepper casserole is a quick and easy meal, perfect for any night of the week! Deconstructed stuffed peppers, flavored with bold taco seasoning, topped with ooey-gooey cheese. Combing stuffed peppers (deconstructed in this case) with all the flavors of the traditional taco and then topping it with melty cheese has to be one of my greatest ideas yet! I also love this dish because it’s so easy to make and comes together in under 45 minutes...."

INGREDIENTS
2 lbs. Ground beef (or meat of choice)
1/8 onion (use a small onion, finely diced)
1 1/2 bell peppers (Finely diced; I used a combo of red, yellow & orange)
2 TB taco seasoning (Use our homemade or a very low carb taco seasoning; Season to taste)
1/4 cup water
14 oz diced tomatoes (*Must be drained! We used fire roasted)
1 cup riced cauliflower
2 cups Mexican cheese blend (or cheese of choice)
