6 tablespoons grass-fed butter (or olive oil, divided)
1 large onion (finely diced)
1 cup diced celery
4 cloves garlic (minced)
1/2 cup chopped parsley
1 1/2 tablespoon finely chopped sage leaves
4 springs thyme (leaves only)
1 lb pork sausage
2/3 cup chicken broth (or milk, as needed**)
kosher salt (to taste)
