INGREDIENTS
165 g (1 cup plus 2 tablespoons) plain flour (all-purpose flour)
pinch of fine salt
3 tablespoons caster sugar
200 ml (3/4 cup plus 2 teaspoons) milk
4 eggs, separated
1 teaspoon vanilla extract
2 tablespoons unsalted butter
2 tablespoons granulated sugar
icing sugar (powdered sugar), to dust
500 g (1 lb) red plums (I use Sugar Plums), fresh or frozen, halved or quartered
55 g (1/4 cup) caster sugar
splash of water
1 cinnamon stick
