1 tbsp sunflower or other cooking oil
1 large onion, finely sliced
3 tbsp butter, divided
3 cups cheese such as Emmentaler or Gruyere (half and half mix recommended), | about 20 oz of cheese
1 bunch chives , finely chopped, for garnish
