INGREDIENTS
2 to 3 lbs chicken legs
3 cups red wine
1 to 2 cups beef stock
1 Tbsp tomato paste
1/4 tsp thyme
1 bay leaf
15 to 20 boiler onions, peeled
2 cloves garlic, minced
1/2 lb fresh mushrooms, washed and trimmed
1 bunch of baby carrots (about a cup)
3 Tbsp softened butter
3 Tbsp flour
4 ounces of bacon
cooking oil
salt and pepper to taste
