Julia Child’s Ratatouille

INGREDIENTS
1 lb eggplant
1 lb zucchini
1-2 tsp salt (for drying veggies)
4-6 Tbsp olive oil, more if needed
1/2 lb thinly sliced yellow onions
2 green bell peppers, sliced
3 cloves garlic, minced
Salt and pepper to taste
1 1/2 lb firm, ripe, red tomatoes like beefsteak, divided
