1 cup old fashioned oats, uncooked

1 cup lite coconut milk

2 egg whites, lightly beaten

2 Tablespoons butter, melted

2 very ripe bananas, smashed
•
1 teaspoon ground ginger (or 1 – 2 teaspoons grated fresh ginger)
•
1 teaspoon vanilla
•
1 cup flour
•
3 Tablespoons sugar (use vanilla sugar if you have it)
•
1 teaspoon baking powder
•
1/2 teaspoon baking soda
•
1/4 teaspoon salt
•
1/2 cup unsweetened shredded coconut (I use Bob’s Red Mill brand)
•
1/2 cup chocolate chips
