200 grams (7 oz) sweet potato starch noodles (dangmyeon)
2 teaspoons sesame oil
1 tablespoon canola oil
2 garlic cloves, minced
1 medium onion, thinly sliced into half-moons
6 shiitake mushrooms, sliced into strips
1/2 red bell pepper, sliced into thin strips
1 medium carrot, sliced into thin strips
1/2 pound (6 oz) baby spinach, roughly chopped
3 scallions, finely chopped on the bias
1 tablespoon sesame seeds
For the Japchae sauce:
3 tablespoons soy sauce
1 tablespoon dark soy sauce
2 teaspoons sugar
