2 large onions, chopped

3 large red bell peppers, chopped (frozen work fine)

4 cups frozen chopped spinach, Swiss chard or kale

2 tsp. salt
•
cooking spray

1 egg
•
1 tbsp. water

4 tbsp. cornmeal, divided

1 heaping cup shredded mozzarella cheese
