Jammin’ Raspberry Buns

INGREDIENTS

1/2 cup (15g) freeze-dried raspberries crushed and sifted
2 tablespoons (15g) King Arthur Unbleached Bread Flour
1/2 cup (113g) milk cold; whole preferred
2 1/2 cups (300g) King Arthur Unbleached Bread Flour
4 tablespoons (57g) unsalted butter melted and cooled
1/4 cup (50g) granulated sugar
1 large egg
2 tablespoons (14g) King Arthur Baker's Special Dry Milk or nonfat dry milk
1 tablespoon (9g) instant yeast
1 teaspoon table salt
zest of 1/2 lemon
1/4 cup (85g) raspberry jam*
1 tablespoon King Arthur Unbleached Bread Flour
3 ounces (85g) cream cheese softened
2 tablespoons (28g) unsalted butter softened
3/4 cup plus 2 tablespoons (99g) confectioners' sugar sifted if lumpy
2 heaping tablespoons (5g) freeze-dried raspberries crushed and sifted
1/4 teaspoon King Arthur Pure Vanilla Extract
zest of 1/2 lemon
