8 oz. mushrooms, sliced (your choice of variety)
1/2 cup vegetable or beef broth
1/2 cup white wine
1/2 cup + 2 tablespoons half and half or cream, divided
2 tablespoons all-purpose flour or brown rice flour
1/4 teaspoon salt
Freshly ground pepper
3 tablespoons fresh parsley, chopped
For the Schnitzel:
1 lb. pork cutlets from roast cut 1/4 - 1/2 inch thick
3 tablespoons all-purpose flour or brown rice flour
1/4 teaspoon salt
Freshly ground pepper
1/4 teaspoon cayenne pepper, or to taste
2 tablespoons unsalted butter
