"It’s just creamy enough...."

INGREDIENTS
1 large stalk celery
1/2 small red onion or 1 large shallot
6 sprigs fresh dill
2 tablespoons nonpareil capers (drained), 1 medium dill pickle, or 2 tablespoons sweet pickle relish
1 medium lemon
1/4 cup mayonnaise, plus more as needed
2 (5-ounce) cans oil- or water-packed tuna
Kosher salt
Freshly ground black pepper
