1 cup finely chopped yellow onion
2 carrots cut into 1/4 inch pieces
2 stalks celery cut into 1/4 inch pieces
1 clove minced garlic
12 cups chicken broth
1 cup or more of small pasta (ditalini or stars)
1/3 cup chopped fresh parsley
1- 5 ounce bag of baby spinach (stems removed)
5-6 ounces chopped escarole or swiss chard
1 small onion, grated
1/3 cup chopped fresh Italian parsley
1 large egg
1 clove minced garlic
2/3 cup Italian breadcrumbs
1/2 cup grated Parmesan cheese
8 ounces ground beef
8 ounces ground pork
Sprinkle of salt and fresh ground pepper
