1 tsp caster sugar

150ml/5fl oz red wine
300ml/10fl oz beef stock
1 x 400g/14oz can cherry tomatoes
1 bay leaf
1.5kg/3lb 4oz marrow
15g/½oz butter
15g/½oz plain flour
250ml/9fl oz milk
25g/1oz finely grated parmesan
125g/4oz mozzarella, drained
