INGREDIENTS
2 Tablespoons olive oil
1 medium yellow onion (grated)
3 cloves garlic (minced)
1/2 teaspoon crushed red peppers
1 head escarole (chopped)
2 cups fresh spinach or 1 bunch fresh spinach (with stems removed)
1 bunch collard greens (with stems removed and chopped)
1 cup chicken broth (or vegetable broth for vegan/vegetarian style)
1/4 cup freshly grated parmesan cheese (optional)
