4 large bell peppers (red, yellow or orange)
1 lb Italian sausage, I prefer mild
¾ cup cooked rice
1 large onion, chopped
¼ - ½ teaspoon crushed red peppers
3 garlic cloves, minced
1 Tablespoon tomato paste
1 slice bread
¼ cup milk
1 small zucchini, chopped
¾ cup gouda, provolone or Monterey Jack cheese, shredded, plus more for garnishing
¼ cup Parmesan cheese, shredded, plus more for garnishing
salt, pepper
fresh parsley, chopped, for garnishing
Serve with Marinara Sauce, optional
Sour cream, to serve on the side, optional
